What are beef shanks?

Beef shanks are a cut from the leg of the cow. The shanks are a frequently used muscle for the animal so they need to be slow cooked and braised. When cooked properly this cut of meat is extremely tender and flavorful. The shank yields fork tender dishes most commonly known as the osso bucco. The osso bucco is an Itailian dish that serves tender beef shanks that were prepared in rich broth and wine.

Cooked in rich broth, flavorful wine, and savory herbs this cut of beef is a chiefs favorite but also a cut you can make deliciously right at home. I am going to share my favorite way to prepare and serve beef shanks.

How to cook beef shanks in the slow cooker

Cooking beef shanks in the slow cooker is very easy and you just need a few ingredients that you likely have on hand.

Here is what you need:

  • butter
  • onion
  • garlic
  • salt
  • pepper
  • thyme
  • rosemary
  • beef broth
  • red wine
  • vegetables to add in the slow cooker, I use carrots and celery.

To start, you need to brown the shanks on both sides in a skillet on the stove top. Heat the butter in the skillet and allow it to get good and hot before adding in the shanks. I use a cast iron skillet for beef cooking because it gets very hot and evenly cooks the beef. This is an important step because browning the shanks will add rich flavor and color to the dish.

Then, after browning the shanks place them into the slow cooker. Add in the chopped onions, minced garlic, and seasonings. Add in some vegetables. I use carrots and celery. Carrots because they are fork tender and ready to serve later on and then the celery because it adds flavor and juice to the dish.

Now that you have all the seasonings and vegetables in the slow cooker it is time to add in flavorful broth and wine. It is important to add plenty of liquid in with the shanks as they are slow cooking.

The beef broth will highlight the natural beefy flavor of the shanks. Red wine will add a savory touch and rich flavor. My favorite beef broth to use is Orrington farms broth base. I use a dry red such as cabernet sauvignon for the wine.

How to serve Beef Shanks

Once the shanks have been slow cooked on low for eight hours the meat will fall off the bone. Strain the contents of the crock pot and save the shank meat, onions, and carrots to serve over pasta. Make some pasta shells in boiling water on the stove top. After straining the pasta shells add in some butter while they are still hot. Stir it altogether until the butter melts. Top the shells with the tender shank meat and carrots. This is a delicious way to serve the shanks.

Beef Marrow Bones

My favorite thing about cooking the beef shanks is the healthy marrow bones that I can turn into gut healing broth. Instead of throwing these bones out, be sure to save them for healthy bone broth. The marrow will fall out of center of the bone when slow cooked adding supreme nutritional value to the dish.

If you aren't planning to make this bone broth right away just store them in freezer bag and freeze the bones. I save all my beef bones from steaks and roast in a the same freezer bag until I am ready to make this homemade bone broth!

Beef Shanks and Noodles Leftovers

Be sure to save any leftovers for reheating for lunch or dinner the next day. You can easily reheat this meal in the microwave or in a skillet on the stove top. I just add a bit of butter to a skillet on the stove and reheat the meat, vegetables, and noodles altogether. These leftovers will keep in the refrigerator for up to four days.

Prep Time 10 mins

Cook Time 8 hrs

  • Slow Cooker

  • 2 cross cut beef shanks
  • 2 tbsp butter
  • 1 sm onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dry thyme
  • 1 tsp dry rosemary
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2 cups beef broth
  • 1/2 cup dry red wine
  • 1 box pasta shells
  • 1 tbsp butter
  • Heat the butter in a skillet on the stove and allow it to get hot. When the butter is starting to slightly smoke add in the beef shanks. Brown for two minutes on each side.

  • Add the shanks into the slow cooker and then add in onion, garlic, salt, pepper, thyme, rosemary, carrots, and celery.

  • Add the beef broth and wine over top the contents of the slow cooker.

  • Slow cook on low for eight to ten hours. The shank meat should be falling off the bones when finished slow cooking.

  • Strain the contents of the slow cooker and save the onions, carrots, and shank meat. Use a fork to shred the meat to prepare to serve overtop the pasta shells.

  • Prepare the pasta shells according to the instructions on the box. Strain the shells and stir in butter until it is melted.

  • Serve the onions, carrots, and shredded shank meat over top the noodles. Garnish with fresh parsley, if desired.

  • Enjoy!! Be sure to save those healthy shank bones to make broth!
